No one supervises everything that moves in our bakery and pastry shop as thoroughly as Jožko. His overview on the flour field is rehearsed from the time when he played football professionally. After finishing his active sports career, he went to the UK to gather experience. After five years, he came back and worked his way up to our Pastry Chef at the Lomnica Hotel.
English pastries simply cannot be compared to ours and Jožko missed them greatly. He combined delicate nuances of flavours and mysterious finesse from British cuisine with Slovak flour and traditional baking. The result is more than fantastic. Simply for one bite.
No bread tastes as good as when made by a baker who loves his profession. It’s a tough job and our Boris is more than extraordinary at it. It takes a lot of patience and testing to iron out the kinks and changes of sourdough.
There is no shortcut. Boris also got experience and observed the hands of skilled baker masters abroad just to return smarter after a few years and delight visitors to the Tatras and his hometown Poprad with his flour masterpieces.
